Let’s be real — boxed mac and cheese is basically a parenting staple. But sometimes I want to feel like I’m doing more than just boiling noodles and hoping for the best.

So here’s my go-to upgrade:Cheesy Mac & Veggie Nuggets Bake – A 20-minute dinner miracle that feels homemade (but isn’t really).

🧀 Cheesy Mac & Veggie Nuggets Bake

What You’ll Need:

  • 1 box of mac and cheese (any brand your kids swear by)

  • 1 cup frozen mixed veggies (corn, peas, carrots — you name it)

  • 8–10 frozen chicken nuggets (or dinosaur nuggets because ✨aesthetic✨)

  • 1/2 cup shredded cheddar cheese (optional, but we’re going big)

  • A sprinkle of garlic powder and pepper

Instructions:

  1. Cook your mac & cheese according to the box. Add a little extra cheese if you’re feeling rebellious.

  2. While that’s cooking, bake or air-fry the chicken nuggets until crispy. Don’t overthink it.

  3. Microwave or boil your frozen veggies just until soft. Drain if needed.

  4. Once everything’s cooked, combine the mac, veggies, and nuggets (cut into bite-size pieces if you're serving littles).

  5. Stir together and sprinkle with extra cheese, garlic powder, and pepper.Pop it under the broiler for 3-5 minutes if you want the top to get all golden and gooey — this step is extra but so worth it.

💡 Mom Hack Bonus:

Mix everything in a casserole dish and refrigerate it for the next day’s dinner. Just reheat and serve — BOOM, two nights handled.
