  • 1 tbsp olive oil

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • Salt & pepper, to taste

  • 1 tsp Italian seasoning

  • 4 cloves garlic, minced

  • 2 cups chicken broth

  • 1 cup heavy cream

  • 8 oz penne pasta (or any short pasta you love)

  • ½ cup grated Parmesan cheese

  • 1½ cups fresh spinach

  • ½ cup sun-dried tomatoes, drained and chopped

🥘 Step 1: Cook the Chicken

In a large pot or deep skillet, heat olive oil over medium heat. Season your chicken with salt, pepper, and Italian seasoning. Sear until golden and cooked through, about 5–6 minutes. Set aside.
