Lazy Mom’s Lifesaver: One-Pot Creamy Taco Pasta (Yes, Please)

Okay, so let me set the scene: it’s 5:32 PM. One kid is asking for a snack, someone else is suspiciously quiet (never a good sign), and I’m standing in the kitchen wondering how it's already dinner time again.
The last thing I want is a mountain of dishes or a meal my kids will poke at like it's alien food.
That’s when I reach for my One-Pot Creamy Taco Pasta — the ultimate lazy mom win.
🌮 One-Pot Creamy Taco Pasta (Dinner = DONE)
What You’ll Need:
1 lb ground beef (or ground turkey if you're feelin' healthy-ish)
1 packet taco seasoning
2 cups beef broth
1 can Rotel (or diced tomatoes with green chiles)
1 ½ cups dry pasta (elbow, penne, or whatever you’ve got)
½ cup sour cream
1 cup shredded cheddar cheese
Salt, pepper, garlic powder to taste
Let’s Make This Magic Happen:
Brown the beef in a big ol’ pot. Drain the grease (if you feel like it).
Toss in your taco seasoning, Rotel, and beef broth. Stir it like you know what you're doing.
Add the dry pasta and bring it to a boil. Once it starts bubbling, reduce the heat and simmer until the pasta is cooked (about 12 minutes). Stir occasionally so it doesn’t stick or turn into a burnt offering.
Once the pasta is tender and the liquid has mostly soaked in, turn off the heat. Stir in the sour cream and cheese until it’s creamy, dreamy, and delicious.
Serve it up with a side of tortilla chips if you’re feelin’ fancy — or just throw it in a bowl and pray they eat it.
